Healthy Bran Muffins

1-1/2 c All-Bran cereal

1 c buttermilk

1/4 c unsweetened apple sauce

2 Tbsp coconut or vegetable oil

1 large egg

1/3 c brown sugar

1/2 tsp vanilla extract

1 c whole grain flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 raisins – soak in hot water

Preheat oven to 375F. Line or grease 12 muffin cups.

Mix together All-Bran and buttermilk. Let sit.

In a large bowl, whisk together apple sauce, oil, egg, brown sugar and vanilla. Add bran/buttermilk mixture.

Add flour, baking soda, baking powder, cinnamon and salt. Stir until just combined. Add raisins.

Spoon batter into muffin tins and bake for 15-20 minutes.

NOTE: Double the recipe and make 18 muffins.

Make buttermilk: 1 tsp lemon juice to 1 c milk. Let stand for 5 minutes.
