Groundnut Stew


1/4 cup oil


1 cooking onion, chopped

Sear, in batches:

2-3 lbs lean beef (top sirloin, cubed)

Into the last batch of meat, stir in:

3-4 Tbsp peanut butter

1 Tbsp paprika

3/4 tsp cayenne

salt, pepper

Stir until the odour becomes that of roasted peanuts, and add:

3 Tbsp tomato paste

3 Tbsp flour

Add all batches of meat back to the pot and stir to coat.


3-4 cups beef broth

2 bay leaves

Simmer for 2 hours.

Serve over rice with chopped:

peanuts, pineapple, tomatoes, bananas, red onion

(and whatever else you fancy… raisins, coconut, cucumber…)
